Vinification: A long maceration of the skins for 35 days and a fermentation in steel

Aging: Aged for 6 months in French and Slavonian oak tonneaux (20% first-passage and 80% second-passage) and for a further 4 months in the bottle

Palate: Dark chocolate, leather and blackcurrant

View: Deep red full of intensity

Nose: Captivating aromas of ripe red fruit

Pairing: Mature cheeses, cured meats and meat-based dishes

Picuraru, from the Pajaru estate, is a Primitivo harvested in the first ten days of September. Vinification involves a long maceration of the skins for 35 days and fermentation in stainless steel. Aged for six months in French and Slavonian oak tonneaux (20% new and 80% used) and for a further four months in the bottle.
