Picuraru, from the Pajaru estate, is a Primitivo harvested in the first ten days of September. Vinification involves a long maceration of the skins for 35 days and fermentation in stainless steel. Aged for six months in French and Slavonian oak tonneaux (20% new and 80% used) and for a further four months in the bottle.
