 GRAPES : 90% Nero d'Avola DOC and 10% Syrah DOC, grown in the hilly area of Partinico at an altitude between 350 and 450 metres above sea level.
 VINIFICATION AND AGING : The Syrah is harvested in the last ten days of August, the Nero d'Avola in the last ten days of September. The grapes, hand-picked in 14 kg crates, are vinified in stainless steel with exposed cap maceration at a temperature of 25°C for approximately 10 days. After malolactic fermentation, the wine is transferred to oak barriques, where it ages for approximately 24 months, followed by a further period of bottle aging.
