 GRAPES: 100% Insolia produced in the Partinico area, Alcamo DOC Bianco, at 350 metres above sea level. The training system is espalier pruned using the Guyot method, and has a density of around 5000 plants per hectare.
 VINIFICATION AND REFINING: Soft pressing in complete protection from the air, fermentation at a controlled temperature, refinement in steel tanks for approximately four months.
