Fresh, light, and mineral. A white wine made from pure Zibibbo grapes, its great strengths are its smoothness and aromatic character. The grapes are harvested in crates to preserve the integrity of the grapes. Maceration and gentle pressing are carried out cold (4°C) to prevent oxidation of the must. The wine is then bottled and aged for approximately four months. Zibibbo is a young wine, with a renowned vivacity on the palate and a strong, decisive character. Its intense aroma and persistence are distinctive features, demonstrating its unmistakable charm and extreme versatility.

Production area

Produced in western Sicily, a hilly area north of the province of Trapani.

White winemaking

Destemming, cold maceration of the skins with the must (4°C). Soft texture of the grapes and very slow, temperature-controlled fermentation. Cold bottling and bottle aging for three months.

Pairing

Ideal with appetizers, fish-based first and second courses, shellfish, and raw seafood. It also pairs well with white meats and semi-mature cheeses.
